Ulcerative colitis is an inflammatory disease that affects the colon, generating a crisis period associated with diarrhea and ulcerations. Stress plays a pivotal role in modulating the inflammatory response and aggravating progression. Different studies have shown that fasting reduces inflammation markers, and intermittent fasting decreases inflammatory markers such as IL-2, IL-6, and RCP. Goal: To evaluate the impact of intermittent fasting on a patient diagnosed with ulcerative colitis. A female patient underwent intermittent fasting (10/14) for eight weeks. Clinical tests were performed for blood count, RCP, biochemical profile, glycemia, and T4/TSH levels. Fecal calprotectin was determined. Clinical exams were assessed before and after intermittent fasting. Inflammation markers, such as CRP and calprotectin, were significantly reduced after eight weeks of intermittent fasting. The patient reported feeling better and was seizure-free during the following months when she continued fasting intermittently. Intermittent fasting allowed for a reduction in inflammation markers.

La telemedicina, a través del uso de plataformas de videoconferencias por Internet, se encuentra cada vez más extendida en Chile, debido a la pandemia de COVID-19 y las restricciones para controlar el virus. El nutricionista no es ajeno a esta situación y ha tenido que modificar las consultas para dar respuesta a esta nueva realidad. Sin embargo, no existe suficiente información respecto al nivel de satisfacción de los usuarios de la telemedicina, que emplea este profesional. El objetivo de la investigación fue describir la percepción de la satisfacción usuaria relacionada con las consultas nutricionales mediante la telemedicina, realizadas durante la pandemia. Se realizó un estudio observacional, descriptivo y transversal. Se reclutaron 62 pacientes de Santiago de Chile, quienes fueron atendidos en una consulta nutricional por videoconferencia. Se diseñó un cuestionario online constituido por seis ítems para determinar la aceptabilidad de la consulta nutricional por telemedicina. El rol del nutricionista en la consulta nutricional por videoconferencia tuvo un grado de satisfacción superior al 70 por cientoEl 62,9 por ciento de los encuestados prefiere que la consulta nutricional sea combinada. Solo el 50 por ciento señala que la plataforma de videoconferencia zoom favorece la relación nutricionista-paciente. La consulta nutricional por telemedicina permite controlar el estado nutricional del paciente sin necesidad de asistir de manera presencial, lo que mejora el acceso a la atención. Existe un nivel elevado de aceptación por parte de los pacientes que han recibido atención nutricional por telemedicina(AU)


Telemedicine, through the use of Internet videoconferencing platforms, is increasingly widespread in Chile, as a consequence of the COVID-19 pandemic and the restrictions to control the virus. The nutritionist is no stranger to this situation and has had to modify consultations to respond to this new reality. However, there is insufficient information regarding the level of satisfaction of telemedicine users employed by this professional. The objective of the research was to describe the perception of user satisfaction related to nutritional consultations through telemedicine, carried out during the pandemic. An observational, descriptive and cross-sectional study was developed. Sixty-two patients were recruited from Santiago, Chile, who were attended in a nutritional consultation by videoconference. An online questionnaire consisting of six items was designed to determine the acceptability of the nutritional consultation by telemedicine. The role of the nutritionist in the nutritional consultation by videoconference had a degree of satisfaction higher than 70percen. 62.9percentof the respondents prefer the nutritional consultation to be combined. Only 50percent indicated that the zoom videoconferencing platform favors the nutritionist-patient relationship. The telemedicine nutritional consultation makes it possible to monitor the patient's nutritional status without the need to attend in person, which improves access to care. There is a high level of acceptance by patients who have received nutritional care via telemedicine(AU)

RESUMEN Las Enfermedades Transmitidas por Alimentos (ETA) son causadas por el consumo de alimentos o agua contaminada, debido a las malas prácticas en el manejo causando daño a la salud de las personas. El objetivo de este estudio fue determinar el porcentaje de cumplimiento de las Buenas Prácticas de Manufacturas (BPM) basado en el Reglamento Sanitario de los Alimentos de Chile, de diferentes fundaciones sociales pertenecientes de la Región Metropolitana de Chile. El diseño de estudio fue descriptivo, en una muestra intencionada y no probabilística de 12 fundaciones sociales de la Región Metropolitana de Chile. Se aplicó in situ la lista de chequeo de las BPM versión 04, código 834 - PR02- INS2. De acuerdo al porcentaje de cumplimiento de 4 factores críticos de las BPM de las 12 fundaciones sociales de la Región Metropolitana, se observó que sólo 3 de las fundaciones cumplen con el 100% de los 4 factores críticos. En relación al porcentaje de cumplimiento general de las BPM, se examinó que el 50% de ellas cumplió con el 70% o más de acuerdo al requerimiento del Ministerio de Salud de Chile. Existe un bajo cumplimiento de las Buenas Prácticas Manufacturas en las 12 fundaciones evaluadas de la Región Metropolitana de Chile, principalmente en la higiene personal y en capacitación además de solo cumplir con el factor crítico Nº1. Por lo tanto, se debe capacitar a las fundaciones y establecer procedimientos escritos para así disminuir y evitar enfermedades transmitidas por los alimentos y garantizar la inocuidad alimentaria.


ABSTRACT Foodborne Diseases (FBD) are caused by the consumption of contaminated food or water, due to poor practices in food handling, causing damage to people's health. The objective of this study was to determine the percentage of compliance with Good Manufacturing Practices (GMP) according to the Food Sanitary Regulations of Chile, of different social foundations belonging to the Metropolitan Region of Chile. The study design was descriptive, in an intentional and non-probabilistic sample of 12 social foundations in the Metropolitan Region of Chile. The GMP checklist version 04, code 834 - PR02-INS2, was applied in situ. According to the percentage of compliance with the 4 critical factors of the GMP of the 12 social foundations of the Metropolitan Region, it was observed that only 3 of the foundations comply with 100% of the 4 critical factors. In relation to the percentage of general compliance with the GMP, it was examined that 50% of them complied with 70% or more in accordance with the requirements of the Ministry of Health of Chile. There was low compliance with Good Manufacturing Practices in the 12 foundations evaluated in the Metropolitan Region of Chile, mainly in personal hygiene and training, in addition to only complying with critical factor Nº1. Therefore, foundations should be trained and written procedures must be established in order to reduce and prevent foodborne illnesses and guarantee food safety.

RESUMEN Objetivo: Comparar el estado nutricional, cronotipo y conducta alimentaria que presenta un sujeto que posee simultáneamente los polimorfismos rs3749474T y rs4864548A con respecto a grupos de sujetos que poseen solo uno de dichos polimorfismos. Métodos: La presencia de los polimorfismos se determinó mediante PCR. Se determinó IMC, riesgo cardiovascular y porcentaje de grasa según lo descrito por Durnin y Womersley y la ecuación de Siri. Se aplicó el cuestionario TFEQ-P19 adaptado a población chilena y el cuestionario Horne-Ostberg. Resultados: El sujeto con ambos polimorfismos presentó obesidad, riesgo cardiovascular y cronotipo trasnochador. Sus puntajes en las dimensiones de alimentación sin control y alimentación emocional fueron bajos. Su puntaje en cuanto a la restricción cognitiva fue el más alto. Conclusiones: La presencia del haplotipo TA (rs3749474T; rs4864548A) aumentaría la posibilidad de tener un cronotipo de tipo de tipo trasnochador, riesgo de obesidad y riesgo cardiovascular asociado a los centímetros de cintura.


ABSTRACT Objective: To compare the nutritional status, chronotype and eating behavior of a subject who simultaneously has the rs3749474T and rs4864548A polymorphisms to groups of subjects who have only one of these polymorphisms. Methods: The presence of the polymorphisms was established by PCR. BMI, cardiovascular risk, and fat percentage were determined as described by Durnin and Womersley and the Siri equation. The TFEQ-P19 questionnaire (adapted to the Chilean population) and the Hor-ne-Ostberg questionnaire were applied. Results: The subject with both polymorphisms presented obesity, cardiovascular risk, and late-night chronotype. Its scores on the dimensions of uncontrolled feeding and emotional feeding were low, and its score for cognitive restriction was the highest. Conclusions: The presence of the TA haplotype (rs3749474; rs4864548A) would increase the possibility of having a late-night type chronotype, risk of obesity, and cardiovascular risk associated with waist centimeters.

FUNDAMENTOS: El estado nutricional puede verse afectado por la conducta alimentaria y los ritmos circadianos. Estos se encuentran regulados por el gen CLOCK, cuyos alelos T del SNP rs3749474T/C y A del SNP rs4864548A/G, han sido asociados con la obesidad en adultos. MÉTODOS: Se evaluó a 65 sujetos usando la técnica PCR en tiempo real para determinar si era portadores del alelo T del SNP rs3749474T/C o del A del SNP rs4864548A/G. Se realizaron mediciones antropométricas, y se aplicó los cuestionarios TFEQ y el Horne-Östberg. RESULTADOS: De los 65 sujetos estudiados, 8 eran portadores del alelo T del SNP rs3749474T/C y 7 del A del SNP rs4864548A/G. Los portadores del alelo A presentaron mayores valores promedio de IMC (26,58), circunferencia de cintura (89,57cm) y porcentaje de grasa (31,56%) no existiendo diferencias estadísticamente significativas entre ellos. No se encontraron diferencias estadísticamente significativas en cuanto a la conducta alimentaria. El 66,67% del total de los sujetos presentó un cronotipo de tipo intermedio. CONCLUSIONES: Los portadores del alelo A del SNP rs4864548A/G presentarían un mayor potencial de sufrir problemas asociados a la obesidad, pero es necesario realizar estudios con poblaciones más grandes y con mejor paridad de género, que permita corroborar esta aseveración


BACKGROUND: Nutritional status may be affected by eating behavior and circadian rhythms. These are regulated by the CLOCK gene, whose T alleles of SNP rs3749474T / C and A of SNP rs4864548A / G, have been associated with obesity in adults. METHODS: 65 subjects were evaluated using the real-time PCR technique to determine whether they were carriers of the T allele of the SNP rs3749474T/C or the A of the SNP rs4864548A/G. Anthropometric measurements were made, and the TFEQ and Horne-Östberg questionnaires were applied. RESULTS: Of the 65 subjects studied, 8 were carriers of the T allele of the SNP rs3749474T / C and 7 of the A of the SNP rs4864548A/G. The carriers of the A allele had higher average BMI values (26.58), waist circumference (89.57cm) and fat percentage (31.56%), with no statistically significant differences between them. No statistically significant differences were found regarding eating behavior. 66.67% of the total subjects presented an intermediate type chronotype. CONCLUSIONS: The carriers of the A allele of SNP rs4864548A/G would have a greater potential to suffer problems associated with obesity, but studies with larger populations and with better gender parity are necessary, which allows to confirm this assertion
